Paw Paw’s Fruitcake

This recipe comes from my grandmother’s cookbook (my dad’s mom). Well, it’s hand written in the back of the book. And by book I mean pamplet from the International Associate of Machinists and Aerospace Workers. It’s the only cookbook she had as far as I know. Anyway, I’m getting off topic. A friend recently posted on Facebook that she wishes she had a good fruitcake recipe. This is the best one I know of, so here goes:

Ingredients

2 C Flour

1 C Sugar

1/2 lb Butter

1 lb glazed cherries (whole)

1 lb glazed pineapple (cut in large chunks)

4 C Pecans

5 Eggs

Lemon Extract (about 2 t)

Vanilla Extract (about 2 t)

Optional (if you want to make it for my mom’s side of the family): Manischewitz wine (or Jack Daniels if you put my mom in charge of liquoring it up)

I didn’t say it was good for you, just that it tastes good. To make it seem healthier, I recommend switching the glazed fruits for dried fruits. I love dried ginger, apples, pineapple, peaches, apricots. Pretty much any dried fruit will do. Honestly, fruitcake is meant to be experimental, so try some different nuts or fruits or whatever (just no raisins. Those things are nasty! Wasted grapes in my book. Well, if you like raisins, I guess you can ruin your delicious fruitcake with their creepy raisininess. Sigh)

Also, the estimated extract measurements are pretty standard for my grandparents (I would be linking Maw Maw’s cornbread recipe here except it seems I haven’t written that post yet. How tragic! I’ll get right on that!). The fact that most of the ingredients have a specific measurement is pretty darn impressive.

Equipment:

Loaf pan (or cookie sheet if you want to go free form) – this can be a full-sized or some of those mini-loaf pans. OR try those new-fangled brownie pans. I think the crust is the best part, so let’s maximize it!

An oven (duh)

Brown paper

Mixing bowl and mixing utensil/appliance (my grandparents did all their mixing with a fork. Back in their day you didn’t have those fancy mixing machines! No sir! You had a fork and you were happy about it! OK, they never pulled any of the old codger “back in my day” stuff, but they DID use a fork for mixing. I don’t even know if they owned an electric mixer)

Chopping tools (unless you get the pre-chopped nuts and fruits)

Now for the actual making part:

Mix butter & sugar.

Add eggs one at a time, beating well.

Add lemon & vanilla extract.

Mix fruit and nuts with flour until thoroughly coated.

Mix in butter mixture.

Line pan with brown paper, greased and floured.

Bake in large tubular pan for one hour, 15 minutes at 350 F. If using smaller pans or 1 lb pans, bake at 300. You can also make cookies by dropping delicious globs of dough onto a greased cookie sheet. They cook for a whole lot less time. I’m not sure how long, so just keep an eye on the first round and do the rest just like that.

Now for the fun part. You can eat it straight from the oven (I recommend doing this with at least some of your cake) OR you can live dangerous and soak it in liquor. DO NOT PUT MY MOM IN CHARGE OF THE LIQUOR!!** WOWEE! When she said she’d soak it, she really meant it. I think my grandmother (mom’s mom) REALLY loved it, but she’s big into bourbon (as in she has been known to give out handles for Christmas. I love my Granny).

OKAY, so the soaking takes a bit of prior planning as you want to let the cake get soaked through. I’d say a week? I really don’t know. I think mom did it for the month between Thanksgiving and Christmas. But you can use a variety of liquids. Bourbon may be a bit much (unless you love the stuff like my family does). Paw Paw always used Manischewitz wine. You could probably use Amaretto to sweeten it up. Just be experimental and let us all know what you tried and how it worked out in the comments!

**A consolation to my mom, that was the first time we’d tried the recipe and she didn’t want to mess up and under-do. I’m sure she’d do a much better job this time. Especially since she reads this blog and hasn’t bought my birthday OR Christmas gifts yet. I LOVE YOU MOM! 🙂

Holly and Stavros

There wasn’t a cloud in the sky on September 18th of this year, when Holly and Stavros got married.  The day was perfect.  The whole wedding was being held at Gettysvue, with the ceremony outside and the reception in the dining room.

Holly was a stunning bride, and everything looked picture perfect with her three little flower girls in close to identical dresses.  They were adorable.

The ceremony went great!  Just a small hitch with the unity candle refusing to light, but once Holly and Stavros lit it together, it stayed bright for the rest of the evening.

As the sun started to set, we raced out for some great couple and family shots.

Finally it was time for the party.  The dance we felt particularly touched by was the dance between Stavros and his mother.  She had flown in all the way from Greece.

Speaking of Greek, we got to experience some Greek dancing first hand!  It was tons of fun.

Amy and Ben

Amy and Ben got married on a sweltering June 26th, but they didn’t let the heat get them down.  We were able to get some great shots thanks to this amazing couple, their great sense of humor, and the willingness of their rather large wedding party to…well…sweat.

Lucky for everyone involved, the chapel was air conditioned, so we could take a break from the heat.  The chapel had gorgeous stained glass windows that really allowed for some nice romantic shots.

Their wedding party was a great bunch!  We had a blast with the group shots.

After the ceremony we headed over to The Marriott for a beautiful reception.  The food was delicious, and the cakes that the bride and groom had picked out were both beautiful.  We especially loved the birthday cake for the Amy’s little brother, and the custom bobble head dolls of the bride and groom.

But by far one of our favorite parts of the night, was Amy and Ben’s first dance to Chuck Berry’s C’est La Vie.  Boy could they dance!

We want to thank Ben and Amy for allowing us to be a part of your big day.  We had a blast and really enjoyed, all the laughter, music, and fun.

Mulligan’s

Love great food?  Want to try a different restaurant because you’ve already tried all the other restaurants in Knoxville? (Hard to believe, we’ve got a lot of them!) Well then we suggest you check out Mulligan’s located off of Ebenezer Road in the Gettysvue Shopping plaza.

We recently got the chance to try a little bit of everything at Mulligan’s.  I mean they really pulled out the stops: soup, salad, several different appetizers, entrees, and dessert, OH! the dessert.  How did we get such a sweet deal, you might ask?  Well I’ll tell you.  We were hired to take the lovely food photographs you see for two local neighborhood magazines: Gettysvue and Whittington Creek.  They are doing reviews of several local restaurants, and we get to tag along.  Pretty great deal, don’t you think?

I love bugs!

Isn’t spring fantastic. I love it! The warm days, flowers, butterflies. But then summer hits, the heat keeps growing and I start longing for fall. Crisp cool air, warm apple cider, but no more flowers and bugs. So, here’s to butterflies and clover.

Thanksgiving

It’s time to gorge ourselves on food and family. My parents have been divorced since I was 7ish & Nate’s split when he was in highschool. What does this mean for us? FOUR THANKSGIVINGS MINIMUM!! We have to go see my grandmother the Friday after. She’s 90 and when Granny says everyone must come to her house, you go. That’s the only thing that sets our schedule. Last year we did my dad’s family, my mom’s family, Nathan’s dad’s family, a couple of friends and I think a few others. I swear by the end of the week we’d had 6 Thanksgivings. Luckily, people are getting creative in their meals, so we weren’t over stuffed with turkey. To tell the truth, we were glad to get to Nathan’s dad’s family’s house where they actually had turkey. We do the same sort of thing at Christmas trying to catch anyone we missed at Thanksgiving.

Elegant Christmas

Above the Rest

Rebecca Claire Photography had the privilege, earlier this summer, to photograph Above the Rest’s work at a local wedding.  If you haven’t heard of Above the Rest before, you should definitely check them out.  They specialize in balloon designs.  That’s right, you heard me, balloon art.  And they are fabulous artists.

Dianna and her crew can create anything out of balloons, and change an ordinary tent into a wonderland.

This particular wedding location was at the Knoxville Zoo, and the balloons created a fun and festive atmosphere.

Foggy nights

It was a dark and foggy night.Headlights in the fog.

On my way home from a friend’s house, the fog just kept rolling in. It hung low and was amazing. Who wouldn’t photograph that!
